Chef Shigeru Fukuyoshi cuts into only carefully picked selections like tuna, flounder, scallops, and sea bass. His wife, Chizuko Fukuyoshi, says the chirashi is especially popular. Each perfectly cooked bowl of rice is topped with different fish, sometimes up to 10 different kinds, depending on what is in season.
